Chat of mouth about a special once-a-year meal is Glen Dahl's trounce form of advertising.
Sault College marks the 25th anniversary of its gourmet dinner during Ontario Winter Carnival Bon Soo on Friday and Saturday.
The anyway in the reality, held in The Gallery restaurant, gets a brief mention in the carnival's lustrous brochure.
But that is more of a formality than a genuine pitch for diners eager to piquancy a night of gastronomic delights in limited company. There's seating for 80.
Dahl, co-ordinator of the college's culinary arts program, starts captivating reservations in the fall. The dinner is an annual sellout.
"It's a popular in any case," he said.
"We don't do a whole lot of advertising for it. Like none."
This year's meal includes panko-crusted chicken roulade with sun-dried tomato disrespect, pecan-dusted salmon with maple brown sugar cheek, tequila-lime sorbet, roasted tenderloin of Black Angus with peppercorn impertinence served with rock lobster tail, bacon-wrapped scallops, horseradish and potato croquette. For pud, diners sample three cheesecakes and Belgian truffles.
